Spaghetti Squash Casserole

I have a difficult time with spaghetti squash due to it crunchy texture but I have recently found a couple recipes in which I love the use of spaghetti squash. This week I tried cooking the spaghetti squash a new way as well and it allowed for the squash to have a softer texture. I poked holes in a Spaghetti Squash and placed in the oven on 400 for 20 minuets. Then I cut the squash in half and backed face down on a cookie sheet with a small amount of water for another 40 minuets. It turns out almost as soft as cooked noodles. Try putting the following recipe together after cooking the Squash as directed above.

Pizza Dip

I recently was asked to start bringing snacks once a month to card night at a friends house. Being I am on a low carb diet, I usually don’t partake in the snacks, let alone make snacks to bring for others to enjoy. This week I made pizza dip. It turned out amazing. Everyone loved it!

Everyone loves pizza right? It is my absolute favorite meal. Well, ok, it might be my second favorite meal as tacos are amazing too. The problem with pizza is all of the carbs in the crust and who wants to peel off the toppings and waste all the crust that was paid for. Well I have a solution, try this Pizza Stew. It tastes just like pizza without the carby crust or the guilty feeling of wasting food when you eat just the pizza toppings.

One Year ago today, our lives completely changed as well as our future. You’re made to think that being tired, stressed and pushed to your limits is the “norm”, well frankly, I was sick of the norm. I knew I had so much more to give to myself, my family, and my career.

One Year ago today, I trusted an absolute stranger, ordered a strange product I told myself I would never do, but I reached my limit within myself and needed to put me first. While my husband laughed as I placed my first order, I shook my head and said: “You won’t be laughing when I’m running circles around you 🤷🏻‍♀️.”

One Year ago today, I found myself again. I was lost for a while but never showed it. But this Mama, “Got her groove back!” I was super mom, super wife, super me! I finally had enough energy to do my laundry instead of running to Walmart to buy new underwear because I just didn’t want to do a wash 🤦🏻‍♀️ Some will laugh at that, but you all know it’s true. As selfish as it sounds, because that’s how I thought before, but putting yourself first and making sure you’re taking care of will make sure everyone in your family is taken care of too. When you set a positive example for your kids then everything falls into place. Our three-year-old daughter makes sure we don’t forget our “shake” or “sticker” in the morning. She also finds some of our DFTs laying around and shouts, “Look, Look, I Thrive!” It’s the cutest thing!

One Year ago today, I started to share my Journey, you would think it would be easy, but it’s not. Showing my vulnerability was incredibly difficult, but I knew deep down that if I felt this way, others had to as well. I didn’t know sharing my journey and this product would shape the course of the next year and what our lives would become. I met an unbelievable amount of like-minded people who would go to the ends of the earth for you, I brought in extra income that I never thought was possible, got to experience all-expense paid vacations after qualifying for Lifestyle Getaways, build a team that I adore and will lead till the end of the earth and what brings me to tears every day is I get to drive my dream car and which payment is taken care of every month as a part of the Auto bonus… all because I shared my Journey.

I was very excited to learn I was a “First Day Thriver”, but I followed the instructions and knew that what I’ve put in my body over the years won’t come off and out in one day. I trusted the Eight-Week Experience and as the tears roll down my face writing this I cannot believe the change in my overall health has amounted to. We Thrive as a family and have lost a total of over 250lbs together and we are finally living life!

Kung Pao Cauliflower

This week I tried this Kung Pao Cauliflower. I added veggie chicken meat for mine and real chicken in my husbands. To decrease the carbs I didn’t use any noodles. I also replaced the sugar with Stevia and the corn starch with Gaur Gum. It turned out amazing!!

Lasagna Stuffed Peppers

This week I tried Lasagna Stuffed Peppers. I was a little concerned they would not heat up well at work but they turned out delicious and they heated up nicely.


2 & 1/2 Cups – Keto pasta sauce

4 Bell Peppers (various colors)

1TBSP Italian Seasoning

1 cup Mozzarella

1/2 Cup Parmesan

1 Cup Ricotta

Mix pasta sauce, Italian seasoning, Parmesan, and mozzarella together in a mixing bowl. Add whatever meat you want to it. I added veggie chicken meal starters from morning star brand. Cut tops off bell peppers and clean out the insides, cook at 400 for 15 min. Take red sauce and cheese mix and put a layer in the bottom of your peppers, add a layer of ricotta, then add a final layer of the red sauce and cheese mixture. Add a little more Parmesan on top and bake at 400 for 30 min or until bubbly and peppers appear tender.
